For the first edition of this series, I present to you a fabulous little jungle lodge - Las Cascadas in La Ceiba, Honduras!
With just 4 luxury cabins, there are never more than about 8 total guests on property at any given time, so it's the perfect hidden getaway for couples or small groups looking for personalized attention. The managers, Ryan and Maggie, are fantastic - knowledgeable, kind, efficient, and fun, and their obvious happiness and excellent service carry over to the rest of the staff as well.
The lodge's fantastic chef tempts your taste buds with both local and international dishes - the meals here were the best we had in Honduras! Be sure to try the Honduran breakfast one morning - sweet fried plantains, avocado, eggs with salsa, refried beans, tortillas, olancho cheese, and chorizo - yum! You can enjoy your meals in the main lodge, or outside next to a waterfall.
My husband and I stayed in the super-romantic Bejuco Cabin, set amongst the palms. Tropical touches abound, from the floors and furniture of native woods to the thatched ceilings to fresh birds-of-paradise blooms and pieces of local sculpture.
The grounds of the resort are every bit as lush as you'd expect, exploding with a profusion of tropical plants and flowers.
"Las Cascadas" is Spanish for "the waterfalls", and with four of them within a short walk or hike, you'll almost always have one all to yourself!
Not in the mood to do anything but relax? Then just spend the afternoon lazing by Las Cascadas' small but lovely swimming pool. Catch some rays in a cushioned lounge chair, or nap in the shade on a colorful hammock!
Want to be more active and blow off some steam? You've come to the right place for that as well! With whitewater rafting, ziplining, horseback riding, mountain biking, hiking, kayaking, and village/market tour options all within minutes of the resort, there's an excursion just right for any traveler's adventure level! We did the whitewater rafting trip (with Ryan as an amazing guide), and had a blast (even went over a class-4 rapid)!
How to get there:
Most major airlines have service into San Pedro Sula (and some even into Roatan), Honduras. From either of these areas, you can take a short flight to La Ceiba, where you'll be picked up at the airport for the 30-minute ride to the resort.
